How to Grill Oysters: A Step-by-Step Guide

Barbecuing oysters is a fantastic way to enjoy these delicious mollusks with a smoky flavor that adds a whole new dimension to their taste. Here’s a step-by-step guide to help you to cook oysters on the grill, complete with information about how long to barbecue oysters and recommended cooking temperatures.

Types of Oysters

Types of Oysters.

There are several types of oysters you can choose from, each with its unique flavor and texture:

  1. Pacific: Also known as Japanese oysters, these are the most common and are known for their briny, sweet flavor.
  2. Atlantic: These have a robust, briny taste with a firm texture and are often larger than other types.
  3. Kumamoto: Smaller in size, these are prized for their sweet, nutty flavor and deep cup.
  4. Olympia: Native to the Pacific Northwest, they are small but pack a punch with their intense, metallic flavor.
  5. European Flat: Known for their distinctive, flat shells, they have a bold, mineral taste with a slight seaweed finish.
What You’ll Need
  • Fresh oysters (in the shell)
  • Barbecue grill (charcoal or gas)
  • Shucking knife or sturdy kitchen knife
  • Grill tongs
  • Heavy-duty aluminum foil
  • Your favorite seasoning or sauce (e.g., garlic butter, hot sauce, lemon juice, herbs)

Preparing the Oysters

First, rinse the oysters under cold water to remove any dirt or debris. Then, using an oyster shucking knife, carefully open the shells. If you prefer, you can also place them directly on the grill without shucking. This will allow them to pop open naturally from the heat.

Preheat your grill to medium-high heat, which is about 400°F (200°C).

If you're going to be using a charcoal grill, you will need to light the coals. Let them continue to burn until they are fully covered with ash. Arrange the coals to create an even layer of heat.

For gas grills, ensure the grates are clean and lightly oiled to prevent sticking.

Grilling the Oysters

Direct Grilling Method (Shucked Oysters)

Place a piece of heavy-duty aluminum foil on the grill grates and arrange the shucked oysters on the foil, meat side up. Add your favorite seasoning or sauce to each one. Grill for 5-7 minutes until the edges start to curl and the sauce is bubbling.

Indirect Grilling Method (Unshucked Oysters)

Place the unshucked oysters directly on the grill grates. Close the grill lid and cook for 5-10 minutes. These will open naturally when they are done. Use grill tongs to carefully remove them.

Pry open the shells, add your favorite seasoning or sauce, and return them to the grill for another 2-3 minutes.

Recommended Cooking Times and Temperatures

  • Shucked Oysters: Grill at 400°F (200°C) for 5-7 minutes.
  • Unshucked Oysters: Grill at 400°F (200°C) for 5-10 minutes, plus an additional 2-3 minutes after adding seasoning.

According to the USDA, it’s important to cook shellfish to a safe internal temperature to avoid foodborne illness. The safe internal temperature for shellfish is 145°F (63°C). Make sure to use a food thermometer to check the temperature in the thickest part.

Serving Suggestions

Barbecued oysters are best enjoyed fresh off the grill. Serve them with lemon wedges, hot sauce, or a simple mignonette sauce to enhance their natural flavors. For added richness, consider topping them with a pat of melted butter or compound butter, such as garlic herb butter, lemon dill butter, or spicy chili butter.

You can also pair them with garlic aioli for a creamy, garlicky dip, or sprinkle fresh herbs like parsley, cilantro, or chives for a burst of freshness. For a luxurious touch, add a small dollop of caviar on top, or a sprinkle of grated cheese like Parmesan or Gruyère for a savory note.

Serve with slices of toasted baguette or sourdough to soak up any flavorful juices, and complement the oysters with pickled vegetables such as onions or cucumbers for a nice contrast.

Finally, pair your barbecued masterpiece with a crisp white wine, a cold beer, or even a sparkling beverage for a refreshing and perfect outdoor meal.
